Bees produce honey from the nectar of blooming plants, but the nectar produced by one flower will be different than that of another flower. Black Cat Honey bee's seek out distinctive New England flora that yield mono-floral honeys with the aroma, taste, texture and color reflective of their particular flower as well as mulit-flora variaties. We currently collect many mono-floral honeyss found in the diverse terrain of that New England has to offer: Raspberry Flower, BuckWheat Blossom, Wild Blackberry Flower, BlueBerry Blossom, GoldenRod flowers,  Red & White Clover, Apple Blossom, and a Victorian Rose bud honey. We also collect a Spring, Summer and Fall Wildflower Honeys.

Black Cat Honey Facts

Honey’s clarity is of great concern to larger honey producers which sell on a national basis. Unfortunately, the process improving the clarity involves heating and pumping it through fine filters. While this may improve the clarity and appeal to the uninformed consumer, this process removes the pollens and the excessive heat destroys the honey's beneficial enzymes.

Raw (unfiltered or unprocessed) honey will exhibit a "wax ring." Although a majority of the wax is removed during the initial settling, following the extraction process, microscopic particles of wax will float to the top as the honey continues to settle in the jar. At Black Cat Honey we guarantee you will get all of our honey's natural benefits, as everything we sell is strained - not filtered.

The color of honey varies widely with the floral source. The spectrum ranges between light from such sources as Red & White Clover & Spring WildFlower Honey to dark amber from our Fall Wildflower Honey & BuckWheat. The color is also affected by the time of year it is produced, with the lighter honey coming earlier in the season, followed by darker honey as the season progresses.

Raw honey and organic products, never any sugar ir corn syrups in anything we do.

All of our honeys are gathered directly from hives and hand bottled, un-pasteurized, thus maintaining the multitude of health benefits of honey that are often lost in overly processed commercial honey, such as overheating to prevent crystallization and make it easier to pack.
